
This is very easy. I tried it last night and it was so good. I picked some fresh tomatoes and green onions from our garden and used it in this recipe.
Here's what you will need:
- Salmon slices
- butter
- onion, chopped
- tomatoes, chopped
- green onions, chopped
- lemon to garnish
- lemon pepper
- salt and pepper to taste
First, rub the salmon slices with salt and lemon pepper. Melt 1/4 cup butter on a pan and fry the salmon slices, 4 minutes for each side.
Set the salmon aside.
Using the same pan, sauté the onions and green onions and tomatoes. I sautéed the onions first for a longer time, about 5 minutes, because I like it transparent, then I add the tomatoes and green onions. I'm thinking it would taste good if you add red pepper and garlic, I will try it next time. Guess what? I'm pregnant LOL! So I prefer less spices for now. You can also add other spices that you like, like parsley. It would make it smell so good. Season to taste.
When the spices are done and sautéed good, spoon it over the salmons.
I like to eat this one with rice. Rod likes to mix his rice with the sautéed spices which taste good too.
